It is always such a magnificent time to be part of the creation and celebration of love. Juli and I got into this train by pure coincidence at the beginning and now we understand better why life pulled us into this amazing direction. I am going to say that if you have never been part of the creation and direction of one of this incredible moments, you are on for a treat. They are full of life. Happiness, dream, complication, problem solving, problem having, confusion, emotion, deception, excitement, love, compasion, expression… and the list is endless… just like life.

We have always had a fascination about Gyros and Mediterranean Cuisine. This menu came in the curiosity and pure munch on wanting to eat a Gyro. From designing the filling to the wrapping it was a total fun process. This week we had a ton of fun and we wanted to share it with you!! DREAMS DO COME TRUE!!!
IT ALL STARTED BACK IN 2015….
Those who know us know, know that we have been in the look for a kitchen of our own for such a long time. Since we started our company in Colorado in 2015, we have been working in many different commissary kitchens, from Loveland to here in Fort Collins. We have traveled back and forth carrying everything… It is hard work I will not deny it, but it is also one that has such beautiful rewards. For a moment there we had the opportunities to have our own kitchen and for a few months we did and it was great, but it still was not our dream but a great place to be alone. We got a taste of how amazing things can be when you create your own environment. We look into buying property, we also had the opportunity to own the what is now Little on Mountain, but just things were not feeling right here or there so we kept ourselves flexible and hopeful that one day we could have our own little kitchen.
A VERY CLEAR DREAM
Juli and I always dreamt about have an open kitchen so people could get to see the action… as cooking is very entertaining to see. We always dream that our kitchen would be small, and with a huge center table where everyone who work with us would share the same space as we all cook together and chat about life. We wanted subway white tiles all over and mostly wood as well with plants here and there. A walkin cooler was a must as in order to cater one or two weddings a week we needed space to store our creations while making it all close to the weekend. We have always wanted to have a small deli and a store front so we could also extend our creations to the community. But we knew that catering always had to be our main focus.
THE OPPORTUNITY
It the most difficulties of times, when our business pretty much shut down, after planning a 2020 wedding season that looked like a perfect season with lots of weddings, and spaces in our calendar to take some time off, and to travel we were ready for the year. But soon that path got very blurry with the arrival of COVID-19. It truck the heart of our business as this new virus spread while humans gathered… it really came and it struck in our achilles heel. We went from the best season to a complete stop. This was around March and the works was yet to come not just for us but for many business and people. We got lucky as we had some savings and also one of my brothers had just moved to Fort Collins and wanted to invest in the company. He had seen it grow from distance and wanted to be a part of it. He really came in the worst time but at the same moment it happened to be the best time for us. We suddenly had the time to venture into creating our own kitchen. Many kitchen business went under and there was great opportunity for us. We got lucky as life opened an amazing place in the heart of West Campus on Elizabeth’s street. We started to work with a friend who is an architect. (Mick Aller) to start shaping the opportunity. My brother became a silent partner (shhh don’t tell anyone 😜) and with a few friends here and there we embarked into the adventure. Times of struggles are also times for opportunities… if want wishes to see it that way. We decided to head into what was going to be a the perfect storm of 2020. Pandemic, politics, climate, all collapsed into a one very harsh year.
THE OUTCOME
It is 2021 and we had just open the kitchen two weeks ago!! Sorry for this but holy shit we are so happy!! It took us 8 months to build it with some amazing workers who pour their heart into the kitchen. We are so thankful for their efforts and now we are cooking and having a great time in our kitchen. I will not bore you more with all this writing and will show you some amazing pictures from John Robson who is amazing with cameras!!
Thanks to so many people for making one of our dreams come true!! All the love and now lets have some fun!! 🥳
